Ardito Coffee Roasters was started in Dearborn, Michigan, to solve a practical problem: truly fresh, clean coffee was difficult to find locally.
Founder Shadi Shami began roasting after buying premium coffee that had already spent weeks or months on a shelf. He wanted coffee with a known roast date, dependable flavor, and a clear standard for how each green coffee lot was evaluated before roasting.
Shadi is a registered nurse. In nursing, small details and consistent processes directly affect outcomes. That experience shaped how Ardito operates: define the standard, verify that it is met, document the result, and repeat the process every time.

Passing the testing standard is the first step. We then roast in small batches in Dearborn, print the roast date on every bag, and ship within days of roasting. The roast date lets you verify freshness instead of relying on a vague best-by date.

The goal has remained straightforward: offer coffee that is independently tested before roasting, roasted in controlled small batches, clearly dated, and shipped fresh.

Ardito comes from an Italian word associated with bold action. For this company, bold does not mean every coffee is dark or intense. It means setting a measurable standard and following it even when that requires more work.
