I’m Shadi Shami, founder and roaster at Ardito Coffee Roasters. I started the company because truly fresh, clean coffee was difficult to find locally. Coffee sold as premium was often already weeks or months past its roast date, and customers had little information about how the green coffee had been evaluated before roasting.
From Nursing to Coffee Roasting
I am a registered nurse. In nursing, small details and consistent processes directly affect outcomes. You define the standard, verify the important information, document what happened, and repeat the process reliably.
I apply that same operating discipline to coffee. Every green coffee lot is independently third-party tested before it enters our roastery. We roast in controlled small batches, print the roast date on every bag, and ship within days of roasting.
The goal is practical: give customers coffee with a clear testing standard, a verifiable roast date, and consistent flavor from one order to the next.
How Ardito Started
My interest in roasting began after my wife and I bought an espresso machine. She is also a registered nurse and introduced me to espresso. As I learned to dial in shots, I kept running into the same problem: even expensive coffee was often stale by the time it reached us.
I bought an entry-level roaster and began studying the variables that affect extraction and flavor. Early batches were inconsistent. I adjusted time, temperature, airflow, and development, recorded the results, and repeated the process. Friends and family began asking for bags once the coffee became reliable. That demand became Ardito Coffee Roasters.
The Testing Standard
Every green coffee lot is independently third-party tested for mycotoxins, mold, yeast, and heavy metals before roasting. Only lots that pass enter the roastery.

Freshness and Consistency
Testing addresses the condition of the green coffee before roasting. Our production process then focuses on freshness and repeatability.

That standard grew from my nursing background, where consistency is not a slogan. It is part of doing the work correctly.
